A Caviston is a family run business in Greystones which was opened in 2008 by Amy Caviston and her husband Shane Willis. We are both passionate about fish and about getting more people cooking and enjoying seafood as much as we do. We strive to provide local seasonal produce in a friendly atmosphere together with value for money
The Caviston name is synonymous with seafood and with quality.

Amy Caviston
Amy grew up in the fish and hospitality trade. Having worked in Caviston’s in Glasthule, Caviston’s Fish Bar on
Abbey Street and in Caviston Restaurant in Monkstown, she has a wealth of experience - both working with seafood and in a kitchen environment.
Amy is the daughter of Stephen and the granddaughter of John Caviston who set up Caviston’s of Glasthule in 1947.
Shane Willis
Shane, together with his wife Amy is a co-founder of A Caviston.
Prior to joining the fish world, he trained as a
chartered accountant
and
worked in corporate finance for six years.
Shane is a Greystones native and lives in Delgany with Amy and their son Fredy the future fishmonger.
Shane is still getting used to the early mornings.
